The restaurantHere food is cooked to order and fine cuisine is served on your plate: a mixture of culinary skills developed from restaurants in Britain and Greek food and traditions. Mark is a chef with over 20 years experience throughout the UK, working up to 3 Rosette, 2 Blue Band Ribbon. Stints have included working at Henlow Grange; Champneys; Bentleys, London; Escargot in Soho, London; The Royal Chase, Shaftesbury; The Bear, Maidenhead; Sir Christopher Wrens and Danesfield House Hotel, Windsor; Dearing Arms, Pluckey; Holy Island and the Isle of Sark.



He has notched up a number of seasons in Crete since The Lemon Tree opened in 2006 which includes a satisfied and growing Greek clientele and returning tourists. A number of our diners are recommendations, either through international guide books, Greek national publications (having featured in the Summer 2009 Gourmet food supplement to a Greek national paper, BMHA), visitors books in resorts or word of mouth.

Mark is of the homemade sauces and puddings school of thought, having done his time as the ‘commie chef’ whose life depended on watching the stock pot and still likes nothing better than savouring a cup of beef tea. Having had vast experience on the sauce sections and working with stock, he has chosen always to follow these examples to achieve the highest standard of finish; the beauty being in following the production from the beginning, to the sauce on the plate, complimenting the food being served. Bubbling hot pans; steaming cauldrons; delicious aromas; an absolute treat, fit for a king’s table. The plate will prove the culinary skill of the chef to anyone who appreciates good food at its best.
